Here's the recipe for the Crustless Spring Vegetable Pie. Sometimes I will make one, cut it up into individual servings and freeze them. Believe it or not, it tastes even better days later when it's reheated.
Ingredients: 4 eggs 1-1/2 C. unsweetened soy milk (or milk of your choice, like skim, 1%, 2%) 4 oz. grated swiss cheese 1 pkg. (10 oz.) frozen chopped spinach 1 pkg. Knorr spring vegetable soup mix
You'll need: Large bowl Strainer (like you use to drain pasta) 9" pie pan Cookie sheet Whisk Large mixing sthingy Nonstick cooking spray
Thaw the package of chopped spinach and squeeze dry by pressing a sthingy against it through a strainer. Preheat oven & cookie sheet to 350 degrees. In a large bowl, whisk the eggs. Blend in milk, cheese, spinach and soup mix. Pour into 9" pie pan sprayed with nonstick cooking spray. Place it on the cookie sheet in the oven and bake for 50 minutes. It's done when a knife inserted halfway between the center and edge comes out clean and the top is slightly browned.
Nutritional Info: 1/4 of the pie = 243 calories, 6g carbohydrates, and 5g fat
Substitutions: If you double the recipe, you can use a 9"x13" casserole dish or pan. You can also try a different cheese like cheddar in place of the swiss, or broccoli instead of spinach.
